Dessert
Glazed Apples
Golden battered apple wedges are coated in a crisp, glassy sugar shell and cooled at the table in ice water - a dramatic Mandarin dessert.

6 dessert servingsVegetarian
Ingredients
- 2 medium apples, peeled, cored, and cut into 6 wedges each
- 3/4 cup all-purpose flour
- 2 Tbsp custard powder
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 2 Tbsp black sesame seeds
- 2 Tbsp neutral oil
- 1/2 cup cold water
- 1 cup sugar
- 5 Tbsp water
- 2 Tbsp neutral oil
- 2 cups neutral oil, for frying
- 1 large bowl ice water
Directions
- Combine sugar, 5 tablespoons water, and 2 tablespoons oil in a saucepan. Simmer over medium-low heat until syrupy, about 15 to 17 minutes. It is ready when a drop hardens immediately in ice water.
- Mix flour, custard powder, baking soda, baking powder, black sesame seeds, 2 tablespoons oil, and cold water to make a batter. Coat apple wedges.
- Heat frying oil to 325°F. Fry battered apples until golden, 2 to 3 minutes; drain. Coat apples evenly in the syrup, transfer to a lightly oiled platter, and dip each piece into ice water just before eating to harden the coating.
